Baked Tilapia

Here’s a really easy recipe. Mum and Dad went on a date tonight, so I had to cook dinner, and normally I wouldn’t mind making something a little more crazy, but I had stuff to do… so this was a most welcome find, and as we are absolutely crazy about fish, being Filipino and all… It was good. I could go into an explanation about how I’m not usually impressed by fillets of whatever, because we’re used to salting and frying a fish when it’s more or less whole, and just scaled and gutted, you know? and it’s got ever so much more flavor than fillets… ahem, so, at any rate…

4 tilapia fillets (about 4 oz. each)
4 cloves of garlic, peeled and minced
about 1/4 cup olive oil
salt
pepper

Place the fillets in a 9 x 13 glass pyrex. Distribute all the minced garlic on top, then pour up to 1/4 cup of olive oil on top, and use a spoon to scoop up an excess olive oil and pour on any spots that you missed. Leave for half an hour.

Preheat the oven to 350 degrees. Season with salt and pepper. Bake for half an hour.

If you’re Pinoy, serve with rice. :P
