Allergy-free Apple… Something

‘Twas supposed to be a cake, but what came out looked not so much like a cake as a pudding, and then when I tasted it, ’twas not so much a pudding as a crisp… so take your pick. :D Apple Cake/Pudding/Crisp/Pie/Whatever, it tastes fine. =) Oh, it is a tad bit… oily. I still have to make adjustments…

3 – 4 medium apples; peeled, cored, and sliced into wedges
1 cup + 2 tbsp sugar
1/2 tsp cinnamon
1/4 cup shortening, melted
1/2 cup oil
1/3 cup tapioca starch
1/3 cup brown rice flour
1/3 cup almond meal/flour
1/2 tsp salt
1 1/2 tsp Ener-G Egg Replacer + 2 tbsp warm milk (= 1 egg)

Preheat the oven to 350 degrees.

Grease a nine-inch pie dish. Arrange the apple slices in one layer in the pie dish. In a small bowl, combine two tablespoons sugar and cinnamon. Sprinkle over apples.

Mix together the one cup of sugar, shortening, oil, tapioca starch, flours, salt, and egg replacer. Spread mixture over apples. Bake for 30 – 45 minutes or until golden brown.
